  • Medium sized saucepan
  • Wooden or heat resistant stirrer


  • ½ cup apple cider vinegar
  • ½ cup hot water
  • ½ tbsp tamari or soy sauce
  • 2 tbsp chopped chili
  • 2 tbsp chopped garlic
  • 2 tbsp chopped ginger
  • 1 tbsp honey
  • ¼ tsp Xanthan gum


  • Chop the chili peppers, garlic and ginger. Put them in a saucepan and add the apple vinegar and the soy sauce or the tamari.
  • Keep it on the stove until it boils, then reduce the heat and let the mixture simmer for 5 minutes more.
  • Mix the xanthan gum with the hot water. It is very important not to leave lumps, so go with a blender if necessary. Blend well until smooth.
  • Then add the mixture to the saucepan and cook until you reach the desired consistency. Keep in mind that after cooling the sauce will thicken a little more.
  • Remove from the heat, add honey (or sweetener of your choice) and mix well.
