- ½ cup apple cider vinegar
- ½ cup hot water
- ½ tbsp tamari or soy sauce
- 2 tbsp chopped chili
- 2 tbsp chopped garlic
- 2 tbsp chopped ginger
- 1 tbsp honey
- ¼ tsp Xanthan gum
Chop the chili peppers, garlic and ginger. Put them in a saucepan and add the apple vinegar and the soy sauce or the tamari.
Keep it on the stove until it boils, then reduce the heat and let the mixture simmer for 5 minutes more.
Mix the xanthan gum with the hot water. It is very important not to leave lumps, so go with a blender if necessary. Blend well until smooth.
Then add the mixture to the saucepan and cook until you reach the desired consistency. Keep in mind that after cooling the sauce will thicken a little more.
Remove from the heat, add honey (or sweetener of your choice) and mix well.
